A big thank you to Learn To Love Food for the nomination of the fabulous One Lovely Blog Award! I am always humbled by the recognition by my fellow bloggers. It’s that feeling of “THEY LIKE ME! THEY REALLY LIKE ME!!!” If you haven’t checked out Learn To Love Food do pop over and check out this great resource to getting even your pickiest eaters to love food….in a healthy and fun way!

So here it goes, 7 things about me:
1) As much as I love sugar, in the last year I have been able to at least come to like tea (hot or iced) unsweetened. It’s like I can actually taste the flavors of the tea now!
2) I often pace when talking on the phone. My kids follow me sometimes.
3) I sleep with one leg out of the covers. Quality temperature control.
4) Pizza is my favorite.
5) Asian cuisine is also my favorite.
6) I love to make lists.
7) My favorite day of the week is Saturday.
Now for 15 nominees for the One Lovely Blog Award….so I am going to bend the rules here. While I could easily jot down 15 of my faves to nominate here…I really want to open this award nomination up to all of the amazing bloggers out there that choose to accept and participate in this award. Especially any newbies out there that are wondering what the heck these awards are and how do I get one? Well…here you go…you jumped in two feet first and started a blog…created by you, putting yourself out there…and that makes your blog ONE LOVELY BLOG to me. I really love the acknowledgement between bloggers by awards. As a newer blog of less than 6 months I have quickly learned that every blog in it’s own right is quite lovely and deserves recognition for the sheer amount of work that goes into doing this. To pick 15, which may seem like a lot to some, it is actually too little and I don’t want to discourage anyone out there that is well deserving of the award by not including them in a list limited by 15. So for all of my blogging buddies out there in the blogosphere….I nominate YOU! Thank you so much for your support and I would like to also make a shout out to all of my loyal readers for all of your encouragement. There have been times that life has gotten so crazy busy that I have thought of putting Cuppa Sunshine & Sugar on hiatus, but my readers keep me carrying on. It’s the “Dirty Harry” version of tech support. A Colorado Springs man was hit with a municipal violation after he ended a long-running battle with an uncooperative computer by blasting it eight times with a handgun Monday, police said.
Lucas Hinch, 37, was given a violation for discharging a weapon inside city limits, police said in a report titled, “Man Kills His Computer.”
The police report said that Hinch “was fed up with fighting his computer for the last several months” and shot it in a back alley behind his home just before 7 p.m., “effectively disabling it.”
Police public information officer Lt. Catherine Buckley said he shot the old Dell desktop machine with a Hi-Point 9 mm pistol.
“He did tell us he thought it was okay because we are an open carry state,” Buckley said. But it is illegal in the city limits to discharge a firearm unless one is protecting life or property, she said. The violation would most likely result in a fine, Buckley said.
The police department posted a photo of the blasted machine on its Twitter and Facebook pages.
“You have to keep that balance whenever you’re working with social media,” Buckley said. “Sometimes when you have things that happen such as this, we like to think we can have a sense of humor, too.”

Oh my goodness you guys….do these look yumm-o or what?! So I confess, my worst eating habit is that I love to graze through the kitchen late in the evening….these may be just the option to satisfy my habit and make it a little healthier. They also will make the perfect snack for my little ones. I will definitely use them as a quick breakfast option that would be great paired with yogurt or fruit…especially on the mornings that feel a bit rushed and let’s face it…weekday mornings at my house….well, we aren’t exactly cooking up eggs and waffles! It’s go, go, go! 😉
- 1 cup oatmeal
- ½ cup peanut butter (or other nut butter)
- ⅓ cup honey
- 1 cup coconut flakes
- ½ cup ground flaxseed
- ½ cup mini chocolate chips
- 1 tsp vanilla
- Mix everything above in a medium bowl until thoroughly incorporated.
- Let chill in the refrigerator for half an hour.
- Once chilled, roll into balls and enjoy!
- Store in an airtight container and keep refrigerated for up to 1 week.
- **You can substitute almost anything for any of the ingredients to work around food allergies, special diets, etc. Soybutter, almond butter, cashew butter, sun butter, etc all works in place of peanut butter. You can use creamed or liquid honey, or agave nectar or even maltitol syrup in place of the honey. If you do not like or cannot eat coconut try some type of crushed cereal, wheat germ, whole wheat flour, granola, cocoa powder…the possibilities are really endless. If you cannot find ground flaxseed you can buy it whole and grind it yourself in a coffee grinder or magic bullet or you can substitute any other dry ingredient in it’s place. Yes, the mini chocolate chips can be regular sized or carob or you can use raisins, cranberries, goji berries, or crushed nuts (almonds, cashews, walnuts, etc) of some kind.

When I saw this article it literally made me smile. There is something about seeing women do things for the first time that only men have done historically. It is so very inspiring that I wanted to share with all of you. I know that for myself, stories like this only encourage me to take the world on in anyway that I dream to. I will be sure to share this story with my little girl and even my boys. Girls (and boys) ROCK!

This is definitely on my menu this week! I stumbled on it as a friend had shared it on Facebook. So glad I did! This One Pot Burrito Bowl recipe by I Heart Naptime will be a perfect new go-to, quick (only 30 minutes!) and easy recipe to feed my family’s love of Mexican food! Yum! I can’t wait to make this! One Pot Burrito Bowls
Yield: 6-8 servings
Prep Time: 15 minutes
Cook Time: 20 minutes
Total Time: 35 minutes
1 Tablespoon olive oil
1/2 cup red bell pepper
1/2 cup diced sweet onion
1 pound lean hamburger
1/3 cup Old El Paso Medium Thick n’ Chunky Salsa
1 15 oz can black beans, rinsed and drained
1 15 oz can corn, drained
1 14.5 oz can diced tomatoes
1 4 oz can Old El Paso diced green chiles
1 cup jasmine rice (or any long grain)
1 Tablespoon taco seasoning
1/2 teaspoon chili powder
2 cups chicken stock (chicken broth works too)
1 cup shredded cheddar/jack cheese
S & P to taste
In a large pan heat the olive oil over medium heat. Saute the onions and red peppers. Add in hamburger and cook until browned. Stir in salsa, black beans, corn, tomatoes, green chiles, jasmine rice, taco seasoning and chili powder. Pour in chicken stock and then bring to a light boil. Cover the pan and reduce heat to low. Cook for an additional 15-20 minutes, or until the rice is all the way cooked.
When rice is done, S&P to taste. Top with your favorite toppings. We like to serve over lettuce in a salad bowl and eat with tortilla chips.
